Experts assert that the largest part of food waste in developed countries is produced by households and is spurred by three global trends. The most important of these is urbanisation, which has resulted in the gradual extension of the supply chain in order to satisfy the food requirements of city dwellers. Increasing remoteness between the place of production and that of final consumption requires food to be transported over greater distances, with the consequent need to improve transport, storage, and sale infra-structure to avoid additional losses.
